Recipe: Chicken Fettuccine Girlfredo

Primary Recipe:  Hungry Girl: Fettuccine Hungry Girlfredo!
Secondary Recipe: Chicken Fettuccine Alfredo (chicken only)

First I started by preparing the chicken since it took the most preparation and cooking time.  As per Cooks.com:

1/4 c. butter
1/4 c. olive oil
1 lb. boneless, skinless chicken breasts, cut into 3/4 inch cubes
1/2 c. chopped green onions with tops
2 cloves garlic, minced

Heat butter and olive oil in a large heavy skillet sprayed with nonstick cooking spray over medium heat. Add chicken, green onion, and garlic; saute until chicken is lightly browned.

*Edit — originally prepared with butter and olive oil. Unnecessary ingredients that only added 20 grams of fat.  Yikes!!

Yep, that’s it.  I covered it and set aside to start Hungry Girl’s recipe (multiplied by 3 from the original)

3 Packages Tofu Shirataki Fettuccine Shaped Tofu Noodles
1 1/2 Wedges The Laughing Cow Light Cheese
3 teaspoon Fat Free Sour Cream
2 Tbsp Kraft Reduced Fat Parmesan Cheese
Salt & Pepper (if desired)

Rinse fettuccine noodles VERY well. Microwave them for one minute, then drain them and pat dry. Add cheeses and sour cream. Mix thoroughly. Microwave to help melt cheese further, and mix some more. Add salt and pepper to taste.

The noodles STANK.. and I did not mean: “The noodles stink”.. No.. That STANK!  They smelled sorta, fishy but that’s why they say to rinse them “VERY well”.  Overall, it was a tasty meal.  Chris did not like it though, he liked the flavor and ate his chicken but he did not like the consistency of the noodles.. he described them as being like calamari, except he likes his calamari breaded and CALAMARI.  Hehe.  I will do this recipe again, but a single serving for myself (as it is originally designed for).  The consistency of the whole meal was even better reheated the next day and the extra laughing cow cheese was EXCELLENT for snacks!
